Ingredients
- Mutton 1 1/2 kg
- Onions 3 (finely sliced)
- Green chilies 3
- Cardamoms 2 - 4 (small)
- Yogurt 1 cup
- Oil 1 cup
- Hot spices 1 tsp (ground)
- Cumin seeds 1 tsp (black)
- Turmeric 1 tsp (powder)
- Ginger paste 1 tbsp
- Red chili powder 1 tbsp
- Garlic paste 1 tbsp
- Coriander 2 tbsp (ground)
- Salt to taste

Cooking Directions
In a cooking pot, heat oil and fry onions till golden brown.
Spread on an absorbent sheet till the onion is crisp.
In the same pot, add mutton, ginger paste, garlic paste and salt and allow cooking for some time.
When meat dries up, then add yogurt, brown onion, turmeric powder, ground coriander, cardamom, black cumin and red chili powder and sauté.
Then add 3 cups warm water and put on low flame and allow simmering.
When oil forms a separate layer, add green chili, allow simmering for 2 minutes.
Serve mutton curry with plain rice or naan.
